Ecuador’s deliciously humble gastronomy 

In a similar vein to Costa Rica, Ecuadorian cooking orbits around fresh ingredients sourced locally. Along the coast, you’ll find ceviche made with shrimp and fish served with crunchy plantain chips or popcorn. Heartier fare such as potato soups, roast pork, and llapingachos (cheesy corn pancakes) dominate the highland regions. Fresh fruit juices made from naranjilla, passionfruit, and guanábana are widely available in Ecuador and shouldn’t be missed.
